In my previous post, I wrote about Prawns Stir Fry, a successful experiment in my kitchen. So, this post is all about the part two of that experiment with prawns.

Normally when we buy fresh prawns from the market, we clean and throw away the prawn head. But not many know that the same prawn heads can be used to make a delicious Prawn Clear Soup and it is really easy to make.

Many a times it so happens that when we order a clear soup in the restaurant and realise that it does not even taste the same as its key ingredient. We end up with the feeling of drinking flavoured, spiced water.  I assure you that you will not get this feeling when you try this soup.

All you need is a decent amount of prawn heads, your choice of spices or herbs and then it is just a matter of minutes. It is so sumptuous in taste that you will really prepare this soup again and again.

I used the classic ginger-garlic-green chillies combination to infuse added flavour in the clear soup but you can just add pepper, lemon juice, soy sauce or other condiments. The below recipe is perfect for a day when you are down with some cold and need a warm spicy soup to cheer up & feel better.

Here goes my version of Prawn Head Clear Soup.

Ingredients:

30 Prawn Heads (approximately)

2 tablespoon oil

½ inch ginger – chopped finely

2 big garlic cloves – chopped finely

2 deseeded green chillies – chopped finely

1 litre boiling water

½ teaspoon table salt

1 teaspoon Vinegar (optional)

½  – 1 teaspoon garam masala /pepper powder (optional)

Chopped coriander / cilantro for garnishing

Serves: 4 bowls of Prawn Head Clear Soup

How it is done:

Clean the prawn heads properly and drain all the water.

In a large pan, heat the oil and then add the ginger, garlic and green chillies.Saute till the oil separates for approximately 1 – 2 minutes.

Now add the Prawn heads and toss them well in the oil. Let it fry for a minute or two and then add the boiling water & salt. Let this mixture simmer on low flame for 10 – 12 minutes. The soup will reduce and the flavours will concentrate. At this point taste the soup and if you want to add some more zing add the garam masala.

Finish the soup with the vinegar and garnish with freshly chopped coriander / cilantro.

So from next time onwards when you buy prawns don’t throw away the prawn heads and waste it. Prepare this delicious, appetizing and tasty Soup!!!
