Spinach and Cottage Cheese Stuffed Mushrooms

It has been seriously very long time since I have blogged. Actually this year I had been lazy and busy in pursuing some of my other hobbies. But yes cooking is my first love and today I am going to post a recipe which you will love to cook again and again – stuffed mushrooms. The filling is of spinach and cottage cheese which is called paneer in India. Spinach and paneer is always an awesome combination and it makes an all time hit side dish called “Paneer Palak”. Perhaps I will post that recipe another day.

Today is all about Mushrooms and Spinach. Not many people like to eat spinach, especially kids!!! I still remember how parents used to encourage children to watch the cartoon ‘Popeye’ as he always got his strength from eating spinach.

This dish can be made as delicious vegeterian appetizers to serve in a party mainly in a children’s birthday party as it is fast and easy to cook plus guess what it tastes yummy. The dish is not only tasty and full of flavors but very healthy and highly nutritious food. Mushrooms and Spinach are rich in nutrients, Cottage cheese i.e. paneer contains proteins. This dish doesnot require even a drop of oil or butter. Alternately you can completely avoid the cottage cheese and use any regular cheese which can complement the spinach. It is prepared from minimum ingredients and not spicy at all.

Ingredients:

10 to 12 button mushrooms

5-6 spinach leaves

50 grams of cottage cheese

2 cubes of amul cheese or any other cheese grated

1tsp of Pepper

Salt to taste

How it is done:

Carve the stems of the mushrooms to make some room for the stuffing.

Separately heat a glass of water and boil the spinach leaves for 4 to 5 minutes. Don’t overcook. Let them cool down. While they are cooling, chop the stems finely like the picture below.

Now grind the spinach in fine paste. In a separate bowl mix the chopped mushroom, spinach paste, crumble the cottage cheese, grated cheese, pepper and salt.

This is all your prep work. Make sure the mixture should not be runny. You can refrigerate the mixture and use it later in the day so that you can serve the stuffed mushrooms as per your convenience.
