Yes you read it right…. egg burji can be made in less than 90 seconds and that too without oil. This is really easy mircowave egg burji recipe which can be made in a cup. It is a mircowave mug recipe.
How many times have you skipped your breakfast? A lot? Usually the reason is getting late or no time or not used to eating so early in the day or not feeling hungry or plain laziness. ‘Instead of eating let me grab a coffee and rush.’
Well after reading this post, I hope I change one above excuse which is no time.
Egg burji or Indian scrambled eggs is a spicy egg preparation dish which is ate with rotis, chapatis or bread. Infact, burji pav is a famous street food in India.
Now that the background is done let’s move to the actual post. Egg Burji is a simple dish to make and if you follow the recipe below you can make this dish in less than 90 seconds and never skip your breakfast. I prepare this dish when I have not planned my breakfast or whenever I am running late due to a zillions reasons! But one thing is sure… I NEVER SKIP MY BREAKFAST. Period!!!!
This easy peasy dish can be spread on a freshly toasted bread or can be eaten as it is directly. I eat it directly from the mug because I don’t like to eat too much of bread.
1/2 small onion chopped
1/2 small green capsicum chopped
1/2 small tomato chopped
1/2 green chillies chopped finely
1 tsp Chopped Coriander
Salt to taste
Turmeric, only if you have it at home
1/2 tsp oil (not compulsory)
How it is done:
Mix well onions, tomato, capsicum, chillies, salt, turmeric, coriander in a tall coffee mug. Add eggs and mix well again.
Now open your microwave oven and use the 30 seconds pulse button. If you don’t have the button just set the timer to 30 seconds. After the first 30 seconds, remove mug from inside the oven and stir the mixture. Now put it inside for another 30 seconds. Remove and mix well.
If you like the consistency then just dig in or else put the mug inside for another 15 to 30 seconds.
Garnish it with freshly cut coriander or mint leaves and pepper powder.
If you do not have time to cut the veggies, just skip them and add pepper, salt, chilli flakes, eggs and put in microwave and follow the above technique and please “Don’t skip BREAKFAST”.
